In the heart of Thessaloniki, on the pedestrian street of Iktinou, a new chapter of culinary culture is about to open.

An impressive new arrival on the city’s culinary scene! East, Mediterranean and West in an impressive combination! Painirli like you’ve never tasted before!

Pinch, the new venture of the well-known Pâtissier Constantinos Tsenikidis and owner of the beloved FLEUR Boulangerie-Pâtisserie in Pylaia Thessaloniki, promises to bring out the traditional taste of the famous peignirli, incorporating unique and creative touches to the classic Eastern-Mediterranean dish.

Few foods connect generations and generations as much as peignirli. From the smell of fresh ingredients in the oven and melted butter, to the first delicious bite, it is the definition of absolute comfort food.

Konstantinos Tsenikidis characteristically mentions his own first contact with the tradition of this unique taste: “I was lucky, due to my grandparents’ origin from Pontus, to hear first-hand stories about the tradition of peinirli, a dish so strongly intertwined with their everyday life. It is no coincidence how quickly it was also adopted by the Greeks of Asia Minor”.

On this occasion, Pinch was created to be a bridge between generations, bringing back in a modern way the authentic taste that has connected people’s hearts to specific flavors. “One can easily perceive that peignirli is a culinary heritage of the Pontus, it has evolved over the years and today it has become a favorite daily dish”says the creator of the new concept.

Pinch’s philosophy focuses on offering special taste experiences, with each bite being an artistic creation, made from the finest and freshest ingredients. Pinch’s location, on one of the city’s most central pedestrian streets, makes it ideal for those who wish to take a break from everyday life, enjoy a delicious meal on the go and continue their walk around the city.

Pinch comes to strengthen the perception of an alternative fast food concept, with quality and authenticity at the center. With a focus on flavor and excellent technique, the goal is to offer a new perspective on peinirli dough and the ways in which it can be transformed, while respecting the tradition it carries.

Pinch will open its doors to the public in May 2024.
