Death expert Dr. James Hallenbeck of Stanford University wrote the book Palliative Care Perspectives. In this he also mentions with which… “closes” the body as far as our senses are concerned.

The order in which our senses leave us when death comes
First the appetite “leaves” us
First, the expert reveals that the first thing that is lost is the appetite. As the body shuts down, it requires fewer nutrients than before, so loss of appetite and lack of thirst can be seen.
Second “leaves” the speech
Speech is the next function to be lost as the body slows down and the voice becomes very difficult.
Then the vision
After the speech, the loss of sight has been observed, although again the professor stated that sometimes people who could not see much of what was around them could instead see loved ones who had already died.
Hearing and touch all the way
The last senses that go away, according to Dr. Hallenbeck, it is “hearing and touching”, as even in the last moments of a person who appears to be unresponsive, he can still perceive the world around him in some way.
Once touch is lost, hearing is the last sense to be lost, and according to a 2020 study some people are able to hear things until their final moments.
